Once you understand the basics of sauce making, there are no limits to what you can create. Your sauce, whether it is roux-based or reduction, starts with the main flavoring ingredient.

In the case of a gravy or veloute?, the flavoring ingredient is either the type of meat, fish or vegetable stock desiredthen thickened with the roux.

A pan sauce depends on reduction for thickening and can be based on meat, wine, stock and finished with heavy cream or swirled with cold butter as an emulsifier (to bring it all together).

Sauces are not difficult to constructand I think you will be happyjust how easily they can come together.

Once you have the basic sauces under your belt you can prepare most any sauce you find.

The most basic of sauces is Bchamel and is considered on of the French “Grand or Mother Sauces.” It is a relatively simple sauce to prepare and has many derivations including Mornay sauce and cream sauce.

There are several derivations to a basic bchamelsuch the addition of cheddar cheese, a simple cheese sauce for vegetables.

Veloute? is a pale, thickened sauce constructed from veal, chicken, vegetable or fish stock. It is made in very much the same way as a Be?chamel. It does not utilize a proper roux, rather it is a simple pale roux of equal parts fat (butter) and flour by measure rather than weight.

Brown sauce by itself is a nice accompaniment to lamb and beef, but by addingmushrooms or a bit of wine it is very rich and appealing.

Brown sauce is a roux thickened sauce. The roux is cooked out to golden brown as the start of the sauce giving it not only deeper color, but a richer taste.

Everybody has a “sauce!” Now you can have your very own tomato sauce. This basic tomato sauce is a beginning point for you to create your own signature sauce. This sauce can be served chunky as prepared with pasta, or can be pure?ed for a smoother version.
